Tepache is a popular drink made from slightly fermented pineapple, spices, sugar and beer. Its freshness is perfect for a summer day. The name tepeche comes from Nahuatl and means "corn drink", which was originally used to ferment the drink. If you want to cook tepache and don’t know how, read this article to learn how to use one whole pineapple and a small amount of beer.
Almond milk kefir
To make a drink, you need to soak 1 cup raw almonds in boiled water, adding a pinch of salt (preferably Celtic, sulfur), a little fresh lemon juice or apple cider vinegar.
After 8-12 hours, drain the water and rinse the nuts thoroughly in clean water. Grind the softened almonds with a blender, combining it with 7 cups of filtered water, and then strain the mixture through clean cheesecloth.
In the obtained almond milk, add 1 tsp. ready-made probiotics in powder (capsule contents can be used). Cover the container with gauze and soak the drink at room temperature for 12 hours. If the apartment is cold, wrap the milk with a terry towel.
After 12 hours, the drink will acquire a yellowish tint, and a thick layer of foam will appear on the surface.
Kefir should exude a characteristic sour smell. If it is absent, and there is very little foam, then the drink is not ready yet.
Collect the top layer of foam - you can use it for baking. Strain the remaining liquid again. You can use half a glass of kefir as a starter for the next batch of the product (instead of ready-made probiotics). Sweeten the part of the drink that will be eaten with stevia (only not with sugar - it will cause intense fermentation) and refrigerate - the finished kefir can be stored in a glass dish for up to 7 days.
Fermented lemonade
If you like drinks based on citrus juice, then this lemonade enriched with lactobacilli is sure to appeal to you.
- 6.5 cups of filtered water,
- 0.5 cup freshly squeezed lemon juice
- 0.5 cups of cane sugar:
- 0.5 cups of whey.
Put all the ingredients in a glass jar. Cover it with a tight lid and shake well until sugar is completely dissolved. Leave the lemonade to infuse at room temperature for two days. Store the finished drink in the refrigerator.
Beetroot Kvass
Beetroot itself is very useful for digestion - even in boiled form. Vegetable helps to cleanse the intestines from toxins and the regeneration of stomach tissues. And kvass made from it also increases the population of lactobacilli in the intestine.
Preparing a tasty and healthy drink is not difficult at all. To do this, you will need:
- 1 large beet (or 2 small),
- 0.5 cups whey
- sea salt and filtered water.
Peel the beets and cut them into cubes. Fold the vegetables in a two-liter jar, sprinkle with sea salt, pour in whey, and then clean water to the very top of the container. Stir the contents and cover the neck of the jar with a clean kitchen towel.
Infuse kvass at room temperature for 1-2 days.
If a white foam has formed on the surface of the liquid, and there are signs of fermentation, the kvass is ready! Strain the drink and put it in the refrigerator, covering the jar with a tight lid.
Pineapple tepache
The drink comes from Mexico light, refreshing and pleasant to taste. And at the same time, it is extremely useful - the tepeche contains enzymes, probiotics, and vitamins important for health.
- 1 large and ripe pineapple
- 2 cinnamon sticks
- 2-3 inflorescences of cloves,
- ginger root (about 2 cm),
- 2 tsp honey
- 2 cups filtered water.
Peel the pineapple and squeeze the juice out of it. Place it and part of the peel in a three-liter jar and add the rest of the ingredients. Stir the contents thoroughly, cover the jar with a clean cloth and leave it in a warm room. After two days, remove the foam from the tepcha and let it brew for another day. Strain and store the finished drink in the refrigerator.
Ginger Serum
By properties, ginger serum reminds everyone of the famous infusion of Kombucha. It may not seem too pleasant to your taste, but the product is certainly healthy. Ginger serum can also be used as a base for making homemade soda water or classic ale.
- 1-2 fresh ginger roots
- 0.5 cups of white (or unrefined) sugar,
- 2 cups filtered water.
Finely chop or grate the ginger root - you will need 2-3 tsp. shredded product. Place the ginger in a glass dish, add sugar to it and pour in two glasses of clean water. Stir the contents with a non-metallic spoon and cover the jar with gauze.
Serum must be infused for five days, mixing all the ingredients daily and adding 1 tsp to it. grated ginger and sugar - to "feed" beneficial bacteria.
Depending on the room temperature, it may take 5 to 8 days to ferment the product.
During this time, the drink will begin to boil gently, become a little cloudy and acquire a pleasant yeast smell. If mold has formed on the surface, remove it with a spoon as soon as possible. If it appears the next day - alas, the drink has deteriorated, and you have to start all over again. Ready whey must be filtered and refrigerated. You can store a drink no more than 7 days.
